Orzo — or Risoni — is a small, rice-shaped pasta from Southern Italy, as versatile as it is satisfying. Toast it in olive oil and cook it low and slow in warm stock for orzotto, toss it cold in a summer salad, or let it drink up whatever broth or pan sauce you're working with.

My pasta is bronze-die extruded in small batches and slow-dried for 120 hours using traditional methods. Made from simply Italian durum wheat semolina and water.
