Orecchiette — "little ears" — is a Puglian classic: small, concave rounds, thinner at the center with pleasantly chewy edges that scoop and hold whatever sauce they meet. Try it with broccoli rabe and sausage, a hearty vegetable ragù, or simply good olive oil and garlic.

Fusilli brings the spiral — springy, textured, and built to trap pesto, chunky tomato, or a bold meat sauce in every twist.

My pasta is bronze-die extruded in small batches and slow-dried for 120 hours using traditional methods. Made from simply Italian durum wheat semolina and water.
